How Does Processing Shape Ethiopian Coffee Flavor?
Processing is the bridge between cherry and exportable green bean. In Ethiopia, smallholder farmers deliver cherries to washing stations or dry their own lots on raised beds. Each method extracts different flavor compounds, dramatically affecting the final cup — even within the same region or washing station.
Washed (Wet) Process
Cherries are de-pulped, fermented in tanks 36–72 hours, washed, and dried on raised beds. Produces clean, bright, tea-like cups with floral and citrus clarity — the signature profile of Yirgacheffe Grade 1 lots.

Natural (Dry) Process
