How We Cup & Score Ethiopian Coffee
Every lot we offer is cupped using the SCA Protocol: 8.25g of coffee to 150ml of water at 200°F (93°C), ground medium-coarse, with a four-minute steep before breaking the crust. Licensed Q Graders score fragrance/aroma, flavor, aftertaste, acidity, body, balance, uniformity, clean cup, sweetness, and overall impression on a 10-point scale.
Cup scores accompany every pre-shipment sample. Buyers receive the signed cupping form, lot ID, processing notes, and harvest date before approving the contract.
